We also went to Deterings to stock up on apples for making apple sauce, we picked jonagold's and prime red's. We were there about a month ago so we will have to go back again to see what other varieties are ready.

Hello!

I was really excited to try out this recipe but what turned out is really bitter, and I'm a fan of bitters! It also tastes really, really yeasty. I didn't use the full amount of yeast and it was also a "pale ale" yeast. I'm wondering if you have any suggestions or ideas?

p.s. I believe the raisins are there as an additional sugar source so the final product gets a nice bubble to it.

Maybe the raisins are nutrition for the yeast. To help it ferment better? Sounds so refreshing!

Laughing Stock Farms is one of the best names I have ever heard of for a farm. It sounds like you had quite the experience, positively one I think a lot of us are envious of. Great story!

Thanks so much! This turned out great. I can't wait to experiment more with the ingredients. We'll have to get together sometime, I'm in Eugene, too!

This is great...as I have a ton of lemons from a friend :). Does the kvass need to be refridgerated like beets after the initial ferment?

Thanks!

I tried making this last night. It came out good except very liquidy. The broth really didn't "cook down" like it was supposed to. I had to drain some of the excess liquid, as there was a lot.. but it still came out great and completely edible which is a good thing and I will def make it again and try again with it.. possibly using chard or collards another time. Do you have any more explanation on how to cook down the liquids? This is my first time making a risotto or using Farro.
